Chocolate Crispie Celebration Cake

Two disasters in one night left me in tears on Tuesday… I started questioning whether I really am any good at this baking and cooking lark?

Here is the first of the disasters (I’ll keep the second disaster for another day). It was a cake that I made for a friend’s birthday (she loved it). I’m bringing this to Angie’s to cheer myself up on this glorious Fiesta Friday.

The recipe was meant to be the actual celebration cake a disaster inspired by Jamie Oliver’s celebration cake in his new book Comfort Food. I started by making the spongy brownie cake part:

250 g unsalted butter, plus extra for greasing
150 g quality dark chocolate (70%)
2 tablespoons olive oil
300 g caster sugar
6 large free-range eggs
150 g self-raising flour
4 tablespoons quality cocoa powder

So I melted the chocolate, butter, sugar and oil in a bowl over a saucepan. Then I added the eggs one by one and finished by sieving the flour and cocoa in. I popped it in the oven for 50 minutes, took the cake out of the oven, and left it to cool…. When I got around to slicing it IT WASN’T COOKED! What was I thinking? I had checked it with a skewer so I don’t know how I managed it?

I went bananas….. I remade another sponge (having tripled the quantities in this chocolate muffin recipe) and carried on with Jamie’s idea. I made two sponges and sliced them both in half, giving me four layers.

I kept going and made the crispy layer to put it on the slices of cake, but I decided to use whipped cream (with vanilla) instead of the nougat frosting. I was worried that it wouldn’t travel well to work the following day.

For the chocolate rice layer:
300 g quality dark chocolate (70%), plus extra to serve
1 large knob of butter
1 splash of double cream
100 g puffed rice cereal

I finished the cake off with milk chocolate and white chocolate curly shards.

I was exhausted by this stage. Was it worth it?

No.

So the following day I was feeling crap about the cake, I was met with some really ungrateful people. They either refused my cake because they “couldn’t eat that because of all the calories, no wonder you say you’re putting weight on…” Or happily took a slice and then didn’t finish it.

It was a celebration cake; the birthday girl cut extremely thin slices because it was so rich AND to ensure that everyone that wanted a slice, got one. So do people not realise that it’s an insult to throw my cake in the bin?

What happened to people’s manners?

And why have I started to question myself…. I thought I loved baking?

    And the people who have thrown your cake in the bin, have very little sense about food. 😀

  3. How rude. It’s making me mad just thinking about the impoliteness of those people at the party. Especially the people talking about calories/weight. Not the appropriate time or place to bring that up- either take a piece or just shut up. Jerks.

  4. Oh, Melissa…what a week indeed. After your comments on my post I just had to run over here. Why are people so mean and ungrateful indeed! If they only knew how much effort and love you put into that cake they would feel horrible.

    You’ve proven yourself over and over again…and left me in awe numerous times for your capabilities in the kitchen. YOU ARE A BAKER EXTRAORDINAIRE!!! Don’t let those haters let a cloud of doubt hang over your head! xoxo

  5. Cut me a big fat slice, Melissa! And then some more! That cake looks divine! Only stupid jerks would refuse or throw it in the bin. Stupid jerks!! To commiserate, I had a lousy week at work, too. That’s why I’m taking the day off. I was reprimanded for leaving 5 minutes early, exactly 5 minutes! But what about all the times I leave later? You know what I mean? Stupid jerks!! Now I feel much better. I hope you do, too. <3<3

  7. Oh, I am so sorry to hear about this experience, Melissa. I don’t think you should doubt your baking abilities at all. The cake looks delicious, and yes, it does look rich, but as you say it’s a CELEBRATION cake! I would take a fat slice and eat it and enjoy it! In fact, this week was my father in law’s birthday and I went back for a second slice of cake. Everyone got a piece and some complained about it being too heavy, but the baker worked so hard on the cake, I didn’t want him to feel like no one was eating it. I also loved the cake of course! I’m not one to turn down cake at a party. I eat a particular way at home — when I cook for myself — but when I’m at someone else’s home, I say please and thank you and finish my plate. Don’t let this experience of someone else’s bad manners ruin your outlook with baking. xx

  8. No need to doubt your cooking skills Melissa – the fault does not lie with you as by now you probably know. Your cake looks lovely, and with those quality ingredients must be really delicious. Too bad some people don’t know what a celebration is, but at least here at Fiesta Friday we do. So forget those party poopers and hope you enjoy Angie’s party – where we love your cake.

  9. Aww, how dare they?!? I won’t eat terrible Tesco donuts because they are… terrible. But something homemade with lots of love and effort? Hell yeah! Okay so I have been on a low carb diet recently, but I would still never ever put good food like yours into the bin. Sacrelige!

  11. Wow what incrediably rude and self absorbed people! These peoples remarks and actions speak more about them as people and has nothing to do with your baking. I am glad your friend the Birthday girl enjoyed the cake. It was made with love for her. That is what counts. I hope you shake this off and keep enjoying cooking and baking.   12. I would gladly enjoy a piece of your cake, maybe even two. It’s a celebration, enjoy yourself and workout a little longer. It’s all about balance and appreciating the finer things in life. Don’t doubt your skills either, everything you post looks and sounds fabulous. Even the best chefs have failures, it’s how you recover that matters.

  13. I’m sorry you had a crappy week and had to deal with such impolite people. I would have happily finished my slice of cake and probably finished off everyone else’s because this sounds yummy!
    I think it’s normal to question yourself when you have a bad day like that, I messed up 3 batches of macarons today and just finally gave up and had a “why do I even bother baking!!” moment, but even the best pastry chefs have off days we just have to keep on trucking. You always have such wonderful recipes, I hope you get yourself out of that funk soon and get back to knowing how awesome you are!

  14. Now that is mean. People throwing away cake, I mean. I can totally relate to it though, I hate it when you make something and your effort is not acknowledged, let alone appreciating it. My advise to you is bake for yourself, don’t stop ! If that’s what you love.. You’ve gotta do it!

  16. And these are the people I heard referred to as ‘the bloody begrudgers’ when I lived in Mayo! The fault is theirs, not yours, but as someone else said, the birthday girl loved it and that’s who you baked it for, isn’t it? A smaller, more select party next time, methinks! That pic with the crispy rice layer made my mouth water BTW – fantastic looking cake and no doubt yummy. Sx

  17. People are not born rude, they are rude because they choose so, don’t bother, really it’s a waste of time and energy. As my best friend says always remember how good you are and don’t let it get you. I had a pretty tough week myself but I keep telling this to myself. If someone doesn’t appreciate your food it’s not getting it next time! How simple is that!

    We have all been there! Spending hours slaving over a recipe and it simply won’t come out right or it comes out perfectly yet no one is hungry or they “don’t care for cake.” My husband doesn’t like desserts (I KNOW.) so I’m used to the fact that most of my baking escapades will go unappreciated unless I invite some dessert-lovers over.

    But we just keep on trying, and we find those times when it is. totally. worth it.

  19. Oh Melissa that’s awful! I feel so bad for you. I often want to bring cakes in to work – mostly so that I’m not picking away at them at home – but everyone here is on a permanent diet so I’d get the exact same reaction that you got.
    That cake looks magnificent and there was so much work went into it. At least the birthday girl loved it. I wouldn’t waste my time with the other ungrateful wenches!

  20. Oh, Melissa! Your cake looks faboo and I love that yo soldiered on. I’ve had my share of cake disasters and that’s all you can do–keep going. Throwing it away is never an option and I’m sorry folks were ungrateful. They did not deserve your masterpiece!

I think it looks amazing, and imagine all those layers that you were able to get-together? That’s an art in itself!     I realise I’m tardy to the party, but I only just googled “celebration cake” because I’m thinking of trying it tonight for a party tomorrow. Thank you for your post and your experience! I will avoid the brownie/sponge conundrum in favour of an ordinary chocolate cake recipe, but I also want to try the whipped cream instead of nougat method – did it work? Was it difficult? Can you give me any pointers?
