It’s Friday, so that can only mean one thing…. It’s party time at Fiesta Friday over at Angie’s place! I’ve met so many new people over the last few weeks and just like me, they bring something to the party.
This week I’m bringing a classic sweet treat to the party; this rich, fudgy, chocolaty bite has been decorated with some Fiesta Friday party glamour. Unashamedly, I’m using goddess Nigella’s recipe…. I’ve used this recipe for years, adding different chocolates or nuts- it works, so I’m not changing it! It’s quick, it’s huge (in her book How to be a Domestic Goddess, she says this recipe makes a maximum of 48) I make about 24 large pieces.
Fiesta Friday Chocolate Brownies
375g soft butter
375g dark chocolate
1 tbsp vanilla extract
500g caster sugar
225g plain flour
Pinch of salt
100g white chocolate
Silver balls (edible)!
Preheat the oven to 180 ° C / gas mark 4. Line a brownie pan (all of it) with parchment paper.
Melt the butter and chocolate together in a large heavy based pan. In a bowl beat the eggs with the sugar and vanilla. In another bowl, sieve in the flour and add the salt.
When the chocolate mix has melted, let it cool a bit before beating in the eggs and sugar, then the nuts and flour. Beat until smooth, scrapping the saucepan into the tin.
Bake for 25 minutes. When they are ready, the top will be dry but the middle still very gooey and dense. They will continue to cook as they cool.
Once the are cool, melt the white chocolate in a bowl over a pan of water. Take the brownies carefully out of the tin and spread on a baking tray or surface that is easy to clean! Using a spoon, high above the brownies and shake the white chocolate over them. It will splash about like paint- be warned! Finally add silver balls sporadically amongst the white chocolate.
