White Chocolate Celebration Cake

WOOHOO!!! It’s fiesta Friday over at the novice gardener so I though I’d share an amazing recipe for a cake I made a while ago, but never shared…. It’s perfect for a party, gathering or any other excuse you need!

WHITE CHOCOLATE AND ORANGE CELEBRATION CAKE….

175g butter, softened

175g golden caster sugar
finely grated zest 4 orange and juice of 1 orange
4 egg, separated
100g self-raising flour
1 tsp baking powder
100g ground almonds

For the filling
1 punnet of strawberries (if there are too many, use for decoration later)
200 ml double cream

For the icing
100g white chocolate
100ml crème fraîche
2 tubs of chocolate cigarillos
1 punnets of strawberries

Heat the oven to 180C/fan 160C/gas 4. Line  two 20cm cake tins. Cream the sugar and the softened butter adding the orange zest. Beat for 1 min or so until pale and fluffy, then beat in the egg yolks. Sift the flour and baking powder over the cake mixture and fold in lightly. Finally, fold in the almonds and orange juice. Whisk the egg whites until they just hold their shape. Fold one-third of the egg white into the cake mix, using the whisk. Repeat with another third, then the final third. Take care not to over-mix or you will lose the lightness of the egg whites.

Divide the cake mix between the prepared tins and bake for 30-35 mins. Cool in the tin for 5 mins, then turn out onto a wire rack, peel off the lining paper and leave to cool.

To make the icing, melt the chocolate over a pan of barely simmering water or in the microwave on High for 1½ mins, stirring every 30 secs, then leave to cool. Whip the crème fraîche until thick, then fold in the white chocolate… Let the mix cool slightly.

Meanwhile whip the double cream and sandwich the to sponges together using cream and strawberries. Then spread the cake with the icing. Allow icing to go tacky before quickly adding cigarillos around side of cake. Top with strawberries and then leave the cake alone!

  3. Ohhh Strawberries = fruit portion, Double Cream= calcium, Almonds = protein, Chocolate surely that’s the only indulgence in your fabulous creation

  4. Oh my, it was good that you share this with us, Melissa. Otherwise, if words ever got out that you made such a marvelous beautiful cake and hoard it to yourself, you might have caused a riot! I can’t say enough about how gorgeous this cake is. It could have easily come out of one of those posh bakeries, except better, since you made it! Thanks for coming to the fiesta and bringing such a perfect pretty cake! XOXO

    • I’m gobsmacked by the reaction!! I’ve done loads of these (I’ll share another one next week), to me it’s just a really good, tasty sponge mix decorated with fruit and chocolate!!!

(only half kidding) you live in the house of my dreams surrounded by nature and visited by a wood-grouse is it? that seems to be your trusting pet from the pics I have seen! In my dreams I live in a place like this, the insulation is perfect, there is a big boiler, it’s warm and not draughty in winters, there is a great airing cupboard for warming bread dough, a south facing terrace for summer sitting and wine drinking, and the summers are warm and not rainy, and the house is never damp. Having grown up in the English coutryside in houses that were large and beautiful but cold and damp in the winters I have come to appreciate well built structures – sadly you seem to be either able to get charming but not well built, or modern, not charming but cozy inside. Good luck with your new beautiful place!
